Eggless Whole Wheat and Almond Cookies


As the Summer Vacation starts here in India, Holidays start for kids and double job for mommies. :D
When kids are at home the home comes alive with their Mischievousness and Playfully acts all the time..

We as mommies are always on toes half the time running behind our toddlers and half in kitchen preparing healthy food for them. So, I thought of doing a Cookie Week where I will share the series of Home Made Cookies that I prepare regularly for my family.

Out of these Cookies Some would be healthy, some not so healthy but delicious of course. :) Some made with Whole Wheat Some with Plain Flour/Maida, Some with Indian Flavor infused like Saffron Some with Kids Favorite Chocolate. I have tried to keep all the recipes absolutely simple and the results are absolutely amazing. You try once and you will keep them baking for ever and ever..:)

So to start with this Cookie baking week, I am sharing thus super amazing and Super Simple Recipe of Whole Wheat and Almond Cookies. Cookies that brings together goodness of Whole wheat and Vitamins and proteins from Almonds. Just 5-6 ingredients and you are all set to bake these amazing cookies.

These cookies are Melt in Mouth and i am not saying since its my recipe, but you try it once and you will believe me why I say so.. :)

lets begin,

Ingredients
* 1 and 1/2 Cup Whole Wheat flour
* Desi Ghee 1/2 Cup
* Powdered Sugar 1/2 Cup
* Cardamom/Elaichi 1/2 tsp ( Optional)
* Almond flaked/Sliced/Crushed Almonds 1/4 Cup for Dough and few for Garnishing
* 1/4 tsp of Baking Powder

Process

1. Take a bowl put together ghee and powdered sugar and beat it wheat till it 
forms a cream and fluffy mixture. 
2. In a separate bowl take flour and mix cardamom powder and baking powder to it before you go ahead and mix the flour to the sugar .
3. Once done combine dry and wet ingredients and using your hand mix them 
well.
4. Add the Almonds and mix everything well.
5. Please ensure not to knead the dough like that of chapati dough. 
6. est the dough for 10 mints. and then start taking small portions of the dough between 
your palm shape them like a ball and then press a little between your palms. 
7. Garnish them with Almond Flakes before popping them in oven
8.Pre heat the oven at 180 degree and bake on same temp for 15 mints. + After 15 
mints keep an eye on them on their color to identify its done..

Your Cookies are ready to enjoy with a cup of coffee tea or just like that...:)
