Urad Dal choorma/Pinni OR white Lentil fudge

Urad dal/ white lentil is very good source of Protein and fiber additionally it has very less cholesterol and fat content.. 
This was my inspiration to make a fudge out of this dal for my little boy. And yes, by god's grace he liked it and my mission was successful..:) 
I was making this pinni/ fudge for the very first time, so was scared of the results but thankfully, everything went well. This is a little lengthy and tedious process but trust me when you put a spoonful of its end result in your mouth, you know why you have been working so hard...:D

Sharing my experiment of this pinni/ Fudge :)

Ingredients
- white split urad dal/ split white lentil 200 grams
- 3/4 cup desi ghee/ clarified butter
- 3/4 cup sugar
- 3/4 cup room temperature milk
- 3-4 tbsp. chopped nuts
- 2 tbsp edible gum 

Process
1. start with preparation of the actual work, take urad dal in colander and wash in running water for 1 minute. 
2. Use kitchen towel to damp the dal after wash and, let it then dry for 15- 20 mints.
3. Now grind the dal into Coarse powder. Please do not use water for grinding the dal.
4. In a small pan take 1/2 tbsp of ghee and in low flame roast the edible gum. Once done churn it into grinder to form a coarse powder.
5. Now take a heavy bottom pan/ wok add rest of the ghee and grinder urad dal. you will have to cook it on low flame and stir continuously.
6. Don't worry of the of the extra ghee that you will see floating in the wok, it will vanish away gradually...:D
7. Once the dal is roasted into nice brown, slowly add milk in batches and sugar. After this stage the actual job of stirring will start. Ensure to keep on stirring continuously.
8. Once you are done with adding all the milk and sugar, on the low flame itself keep on stirring the mix so that all the moisture is evaporated from the mix and it turns into a rather dry mix. 
9. Once the mix starts turning into a dry mix add powdered edible gum and chopped nuts. and cook for another 2-3 minutes.
10. Your yummy, rich white Lentil fudge is ready. You cal add a little more milk at the end and turn the fudge into ladoos too..:)

Tips
* As I have mentioned again and again please pay regular attention to the urad dal and stir continuously to avoid burning.
* You can increase decrease the quantity of milk as we are eventually making the moisture evaporate.
* I used almonds and pistachios you can use walnuts, cashews etc.
* You can skip the edible gum part! and it will make not much difference. :)
