Tri coloured Dhokla

Tri colored Dhokla

Independence day is around and wanted to dedicate my cooking to the true spirit of Patriotism. Thought a lot , as I was wiling to do something healthy, non sweet, quick and yet beautiful.
Though of doing a cake first but then, already had stock of GJs with me, so sweet was out of my mind.:D after lot of thoughts, I decided on a tri coloured Dhokla..:)

Was little tricky to prepare a tri colour and then arranging, but the results are there in front of you..:)

Prepared 3 small batches of different colour and then arranged together. Here is the details recipe:

Ingredients (for saffron and Green dhokla)
-  3/4 cup besan/ gram flour
- 1/2 cup thick yogurt
-  1/4 cup water
- salt to taste
- for color I used 2 tbsp of spinach purée for green color and 1 tsp of degi mirch/Peprika and a pinch of lime yellow food color for saffron (you can use food/edible colors only too)
- lemon juice 1 tbsp
-  1 tbsp sugar
- 1 tbsp oil
- 1 tbsp fruit salt
-  1/2 tsp. grated ginger
-  1/2 tsp finely chopped green chilly

Ingredients (for white Dhokla/rava dhokla)
-  1/2 cup fine rava/ semolina
- 1/4 cup thick yogurt
-  2-3 tbsp water
- salt to taste
- lemon juice 1/2 tbsp
-  1/2 tbsp sugar
- 1/2 tbsp oil
- 1/2 tbsp fruit salt
- 1tsp grated ginger
-  1 tsp finely chopped green chilly

Ingredient for tampering
- 1 tbsp oil
- few curry leaves
- 2 green chilies splitted
- 1 tbsp mustard seeds
- 1 cup water
- 1 tsp salt
-  1 tbsp sugar
- 1 tbsp lemon juice
- fresh coriander to garnish

Process

- In two separate bowls divide the gram flour in two, add half of yogurt to each bowl and mix well to ensure no lumps are formed. Slowly ad half of water to each bowl and give it good mix. Now add half salt, half oil, half sugar,half ginger ,half green chilies to each bowl and give it a good mix. Now add co lour or natural green( I used combination of both; for green spinach purée and for red degi mirch and a pinch of lime yellow food color) to each bowl and stir well. Let the mix rest for 5 mints.

 Now take 2 same sized microwave safe bowl and grease it well. Just before adding the batter to the bowl add fruit salt and very quickly give it a mix. And once done immediately transfer the batter to greased pan. And ,on full power microwave for 4  minutes each.

* repeat the process for rava dhokla.

Once all the 3 Dhoklas as are ready arrange them with green being bottom most layer followed by white and then saffron. Let the dhokla cool before adding tampering to it.

Process for tampering
Heat oil, add mustard seeds, let it splutter. Once done add curry leaves, green chill and cook for a minute. Add water , sugar, lemon juice and salt. Let this boil for 3-5 mints.
Before adding this to Dhoklas let it cool. Once done cut the Dhoklas in desired shaped and generously pour tampering over it. Garnish with freely chopped coriander..:)
