Eggless Whole Wheat chocolate Dates Cake.

Eggless Whole Wheat chocolate Dates Cake.

Who doesn't loves cakes. I love them, both to eat and bake...:D
My little champ loves cakes too, and which mommy would not want to feed her kids her as health as possible food. I was planning to bake this cake from long, after few failures and that so disastrous failures I finally nailed on onto this whole wheat cake. This came absolutely perfect, with right amount of sweetness , not dense at all and perfect combination of healthy wholesome fiber with richness of wheat.

And, I am taking my healthy cake to Fiesta Friday #30, co hosted by Angie and Margherita., thanks to you both.. Happy FF..:)

This cake can be made with APF/ maida too, but I would insist give at least one time trial to it with whole wheat..:)

So here is the detailed process and ingredients proportions

Ingredients
- whole wheat flout 1.5 cup
- seedless dates 12-15
- warm milk 2 cups
- oil 1/2 cup( I used sunflower oil, you can use any vegetable oil too)
- castor sugar 1/2 cup
- unsweetened coco powder, a little less than 1/4 cup
- vanilla extract 2 tbsp
- greased tray for baking
- some flour to dust the baking tray
- baking soda 1.5 tsp

Process
1. Take a bowl add warm milk and put dates in it. Let the dates rest in milk for at least 2 hours.
2. After 2 hours take a grinder jar/ blender jar, put the milk and dates mixture and grind till nice smooth puree.
3. Now, add vanilla, oil and sugar to the same grinder and give it 5-6 pulse to turn everything in a nice homogeneous mixture.
4. In a separate bowl, sieve together flour and baking soda at least 2 Times. This give nice air to the flour and help your cake rise nicely.
5. Now in a big bowl put flour and wet mixture and mix nicely, do not over beat the mixture. If the consistency of the cake is not that of a pouring one, add few tbsp. of more milk to adjust.
6. Now take a baking tray grease nicely from all the sides with oil and dust with flour.
7. Pour the cake batter an give a tap twice / thrice.
8. Bake the cake in a preheated over at 180 degrees for approx. 40 mints. But ensure to keep an eye after 35 mints. As every oven has different cooking temperatures  and tin.

Your super soft, amazingly spongy whole wheat Choco cake is ready to enjoy... I topped the cake with homemade chocolate ganache and silver sugar balls along with chocolate shavings. :D

Happy baking...:)
